Cauliflower Salad with Tahini
 
 
This recipe is provided by Chef Husam Abbas – Al-Babour Restaurant:
 
  • Materials for 6 people:
    1. 1 Fresh cauliflower (1 kilogram).
    2. Cooking oil.
    3. 1 Cup of Hilal Tahini.
    4. 1 Cup of cold water.
    5. ½ Cup of fresh lemon juice.
    6. 1 Teaspoon of sumac.
    7. ½ Teaspoon of salt.
  • Method of Preparation:
    1. Break up the cauliflower into small pieces.
    2. Heat up the oil in a pan.
    3. Fry the cauliflower pieces until they become golden.
    4. Place the fried cauliflower in a strainer to get rid of the extra oil.
    5. Mix the tahini, salt, sumac and lemon juice in a bowl until texture is uniform.
    6. Add the fried cauliflower to the mixture.
    7. Serve cold.
